Roast Loin of Pork

I roasted a little pork loin that had been presalted and left to rest in the fridge for three days. It was uncovered yesterday morning and put back in the fridge to air dry. Just before it went into the oven it was rubbed with fresh garlic, rosemary from the garden, and lots of black pepper. OH MY it was so tender and flavourful.
Sides were fresh green beans and a small orangetti spaghetti squash. And of course mashed potatoes with gravy.



Is there anything better than pork gravy? As much as I love turkey or chicken gravy, pork is my favourite. So rich.

  2. my favorite gravy of all time would have to be that white country gravy they serve over chicken-fried steak down in the US. I could eat that poured all over mashed potatoes and good buttermilk biscuits every morning.

    the loin looks lovely, and great idea on the spaghetti squash - that is one of Jason's favorites :)
