Penne with Grilled Chicken
This is one of those really simple dinners that doesn't take long to put together after getting home from work.
Basic Steps:
Put the water on to boil for the pasta.
Flatten the chicken breasts and season - rub with garlic, salt, pepper, a smear of Dijon mustard the juice of half a lemon and a little olive oil. Set aside.
Saute garlic in olive oil and add a can of quality Italian tomatoes. Season with salt, pepper and hot pepper flakes. Toss in a few Kalamata olives.
While the sauce is simmering, turn on the grill.
Add the penne to the boiling water. Let the pasta cook a couple of minutes and then put the chicken on the grill. Only takes about 5 minutes to cook. When the pasta is done, drain and toss with in the sauce. Add a handfull or two of fresh chopped basil and serve.
See what I mean? Easy and quick.
