Beef Dip Sandwiches

I'm not sure if anyone has noticed, but I don't make many salads. It isn't because I can't. I actually make really good salads. I just don't care for them. Moe on the other hand, loves salads and would be happy if I would make one every day. Poor guy is lucky if I make one a month. Well tonight was his lucky night. I made a salad to serve with Beef Dip Sandwiches. I have a commercial electric slicer that doesn't get used often, but I got it out tonight and used it to thinly slice last night's leftover roast.

The salad was easy. No recipe. Just baby greens with thin sliced red pepper, chopped green onion, shredded carrot and some sprouts and Cilantro. No recipe for the dressing either. But it was easy. Using a microplane, I grated a garlic clove and about a one inch piece of fresh ginger into a small bowl, added a little salt, pepper, rice wine vinegar, peanut oil, a little Thai sweet chili sauce and a little bit of sesame oil. Drizzled over the salad and sprinkled on some toasted sesame seeds. (Toasted the seeds in a small frying pan).

  4. The beef was off of a roast I did the day before and the AU JUS was also leftover.
