Prawns with Lemon Pesto

While the local spotted prawns are in season we will probably have them once a week. Yesterday, Clif and Barb, our wonderful neighbours, picked up five pounds of live prawns at the Cowichan Bay docks. Clif cleaned them so that, when I got home from work, I mixed up a lemon pesto and tossed the prawns with the mixture.

They were left to marinate for 45 minutes before being threaded on wooden skewers and then grilled.

They don't take long to cook on a hot grill. Less than three minutes.

Wonderful simple dinner of grilled prawns, and corn on the cob.
