This has been one of those weeks where I haven't done much cooking. Last Wednesday we went out for dinner with our neighbours. Thursday I had a craving for a hot dog, so, on the way home from work. I stopped and pick up European wieners and a baguette. TIP: If you are like me and you don't like regular hot dog buns, try cutting a baguette to size. Most baguettes will yield three buns.
Moe was not feeling well on Friday so I made him a pot of potato leek soup and Saturday night we had a pork dinner. I presalted a small rack of pork Thursday night and covered it in plastic wrap. I unwrapped it Friday night so that it could air dry and before work Saturday, I rubbed it generously with fresh garlic, sage and lots of black pepper. Moe put it in a 375°F oven shortly before I got home from work so I just had to prepare the sides. Served it with mashed potatoes, buttered peas, a baked sweet potato and of course lots of gravy.
Hi Ann! Thank you for the terrific tip about using a baguette for the buns ~ we have a couple of fantastic sausage makers around here... I'll bet you can guess what will be on the menu this coming week... *grin*

The show stopper is your rack of pork dinner. ~oh my gosh~ I do believe pork is my favorite meat~ and you always have the best preparation methods. I'm a convert of salting and aging, too. But I hadn't tried it with poultry until you suggested it ~ wow, what a difference! Thank you for sharing your technique.
I think, in these parts, I would have to special order a rack of pork ~ I'll definitely do that in the future, your recipe is too mouthwatering to pass up.

I love pork too! Jacques made amazing little pork tenderloins on the BBQ that he had marinated..the loins not the BBQ:) and they melted in our mouths..I bet yours is the same..so elegant Ann..
