Firecracker Prawns


Firecracker Prawns
Adapted from Week of Menus Blog

 1 to 2 lbs spot prawns
1/4 cup of very soft butter
1/4 cup olive oil
1/4 cup chopped cilantro
1/4 cup chopped red pepper or 
Bird's eye chili peppers (Thai chili peppers)
(I use a combination of both) 
3 tablespoons of finely chopped garlic
Juice of one lime
Salt/Pepper

Mix butter, olive oil, cilantro, peppers, garlic, lime juice
and salt and pepper together.

Cut legs off prawns.
On opposite side, split back shell down middle and butterfly open.


Place rack on top shelf.
Preheat oven to broil. 450°F. 
Place prepared prawns on oven proof dish, 
in single layer.


Spoon sauce over each prawn and place under broiler.


Turn baking dish once or twice for even cooking.  
Only takes about 3 to 5 minutes depending on size of prawns.
Can be served as an appetizer or
main course.
