Butter Tarts - A Canadian Favourite

I had a craving for something sweet
Not much sweeter than Butter Tarts.

I made my all butter pastry.

Filling
(Enough for 16 to 20 tarts depending on size)

3/4 cup butter 
3/4 cup brown sugar
3/4 cup maple syrup
pinch of salt
2 eggs beaten
pure vanilla extract.

Preheat oven to 450°.

Melt butter, sugar and maple syrup over
low heat.  Just long enough for the 
butter to melt.
You don't want the mixture hot.

Remove from the heat and add beaten eggs.
Add vanilla.  

Roll out pastry and using a biscuit cutter
cut out rounds to fit your tart tins.  

Fill tarts about 3/4's full.
Bake in bottom 1/3rd of oven
for about 12 to 15 minutes until filling
is puffing up and bubbling and
pastry is starting to turn golden.

Remove from oven and let sit for
one minute.
Run a small spatula around the tart
to loosen and remove from tart tin.
Place on rack to cool.

NOTE:  Do not let cool in pan as they will stick and it is almost
impossible to remove them.
