We ate big this morning
so for dinner I just made soup.
French Onion Soup
topped with Swiss Gruyere Cheese.
French Onion Soup

3 to 4 large white onions sliced
1/4 cup butter
1 tablespoon minced fresh thyme
salt
pepper
6 to 8 cups combination of chicken and beef broth
1 tablespoon flour
Port or Sherry
Swiss Gruyére
Croutons.
Cut 1" thick slices of baguette.
Remove Crusts. Cut into large croutons.
Heat oven to 350°.
Place baking sheet in oven with one tablespoon of butter.
When melted, add the bread cubes, toss with the butter and bake
for 10 to 15 minutes tossing a couple of times until croutons are
crisp and golden.

Cook onions in butter until caramelized.
Do this slowly over low/medium heat. (45 to 60 minutes) Stirring
often.
When onions have caramelized, add tablespoon flour and cook for a
minute or two.
Add the fresh thyme.
Season with salt and pepper and add the broth.
Simmer for 30 minutes.
Add a splash of sherry or port.
Fill oven proof bowls with soup. Top with toasted croutons and
cover with shredded Swiss Gruyére
Place under broiler until cheese melts and is starting to brown.
