Spaghetti Pomodoro with Homemade Italian Sausage



Italian Sausage
Adapted from my Pork, Garlic and Basil Meatball recipe.

1 1/2 pounds ground pork
2 cloves garlic, mashed
1/2 cup fresh basil
1/2 cup fresh breadcrumbs
2 eggs
1/4 cup chicken broth
1/2 cup Parmesan cheese
1/2 teaspoon of crushed fennel seed (to taste)
hot red pepper flakes to taste
fresh ground black pepper
salt
splash of red wine

Put pork  in a bowl. Tip: Using a microplane grate the garlic. This is the quickest and easiest way to make a garlic paste. Add the Parmesan cheese and the salt and pepper, crushed fennel seed and red pepper flakes.  Pulse the basil with the bread crumbs and add to meat. Add the eggs and mix well.  Add a splash of red wine (1/4 cup).

Tip: To check for seasoning by frying a small piece.  Adjust to personal taste.

Shape into patties and grill or fry in olive oil.

Also makes a nice side with butter basted eggs.

  3. I make my own Italian sausage too. I plan to fix your recipe as a burger. I've been treating my husband to bratwurst, bifteki, and even chorizo burgers. He's a burger man and loves the variety. The flavorings go a long way in mitigating the lack of salt due to his diet restrictions. You're always an inspiration!
