Grilled Quail


Butterflied Quail
Marinated early in the day with garlic,
lemon zest, oregano, salt, pepper and olive oil.

And about an hour before going on the grill,
I squeezed the juice of one large lemon over the birds.


Grilled started over direct heat and
finished over indirect heat.
