Peppercorn Steak



Dinner last night. Peppercorn Steak with a cream sauce seasoned with blue cheese. This is another one of those quick to put together dinners. New York Strip steaks, well trimmed and presalted for at least a couple of hours. Rubbed with fresh garlic and coated in crushed peppercorns. I used a mix of green, black and pink. But if you just have black peppercorns that will work.





Heat a cast iron (or other heavy) over high heat. Add a splash of olive oil and a tablespoon of butter and saute the steaks on both sides until  brown. Don't over cook. Good quality steaks should be served rare to medium rare. Remove steaks from pan. Keep warm.  Add a minced shallot and saute for a minute. Add minced garlic and a cup of cream. Simmer until cream thickens. Add 1/2 cup of your favourite blue cheese. I prefer Gorgonzola. When the cheese has almost melted add the steaks back to the pan. Coat with sauce. Serve with favourite sides.

    I like the idea of using the peppercorn mix, and that Gorgonzola sauce is such a sublime finish. Who needs a cookbook? We've got your fabulous blog to refer to (and your photos are better than most any cookbook I've seen.)
