Heat a cast iron (or other heavy) over high heat. Add a splash of olive oil and a tablespoon of butter and saute the steaks on both sides until brown. Don't over cook. Good quality steaks should be served rare to medium rare. Remove steaks from pan. Keep warm. Add a minced shallot and saute for a minute. Add minced garlic and a cup of cream. Simmer until cream thickens. Add 1/2 cup of your favourite blue cheese. I prefer Gorgonzola. When the cheese has almost melted add the steaks back to the pan. Coat with sauce. Serve with favourite sides.

Done to perfection!
ReplyDeleteI like the idea of using the peppercorn mix, and that Gorgonzola sauce is such a sublime finish. Who needs a cookbook? We've got your fabulous blog to refer to (and your photos are better than most any cookbook I've seen.)
Brava my friend!
I've been meaning to tell you how much I really like your new format with larger pictures (all the more to enjoy!)
