Chicken Souvlaki and Greek Salad

We had dinner with our neighbours - Clif and Barb - last night.   This dinner of  Chicken Souvlaki served with rice and a Greek salad is one  of the easiest and quickest dinners to put together after a long day at work. 

Served with a Tzatziki Sauce

The chicken breasts are cubed and seasoned with garlic, oregano, salt, pepper and fresh squeezed lemon juice and left to sit while the rice cooks. ( How to Cook Rice)  There is time to put the salad together also while the rice cooks.  Once the rice is tender, it is set aside to finish steaming in its own heat while the chicken is grilled.
