Ribs and Baked Potatoes




The heat wave continues here on the Island. We have had a week now of temperatures up in the mid to high 90°F's and it is suppose to continue for a few more days.

Moe and I went into Victoria today just so we could be in the air conditioned car. We had lunch at our favourite Dim Sum restaurant and then we visited a couple of galleries on the Stinking Fish Studio Tour. On the way home we stopped at Costco and picked up a few things. I gave Moe a choice between wings or ribs on the grill for dinner. There was no way I was cooking inside tonight. He choose ribs. The ribs were seasoned with garlic, oregano, fresh lemon juice and salt and pepper. Greek style, served with baked potatoes. Baby Back ribs only take about 45 to 60 minutes to cook over indirect medium heat. I rubbed a couple of russet potatoes with butter and sea salt and baked them on the rack above the ribs.
