We are having burgers with our neighbours tonight. Rather than buy Kaiser buns (my favourite hamburger bun) I decided I would bake buns instead. I used the recipe from King Arthur Flour but adapted it slightly.
The original recipe had way to much sugar for my taste so I added just a teaspoon of honey. Next time I'll probably leave that out too. Unless I'm making a sweet bread I never add any sugar to my breads. I also used 4 cups of flour and regular yeast rather than instant.

Hamburger Buns

Adapted from King Arthur Flour
1 1/4 cup water
2 tablespoons butter
1 large egg
1 teaspoon honey
4 cups flour all-purpose Flour
2 teaspoons salt
1 tablespoon yeast
Egg wash ( 1 Egg beaten with 1 teaspoon water)
sesame seeds/poppyseeds
Mix and knead all of the dough ingredients by hand, mixer, or bread machine to make a soft, smooth dough. Cover the dough, and let it rise for 1 hour, or until it's doubled in bulk.
Gently deflate the dough, and divide it into 8 pieces. Shape each piece into a round 1" thick (more or less); flatten to about 3" across. Place the buns on a parchment covered baking sheet, cover, and let rise for about an hour, until very puffy. Brush lightly with egg wash (1 egg beaten with 1 tablespoon water), and sprinkle with poppy seeds and/or sesame seeds. Bake the buns in a preheated 375°F oven for 20 to 25 minutes, till golden. Cool on a rack.
I too make a burger bun recipe from KAF (I just love KAF, they are "down the road a piece" from me), but yours look soooooo much better!! You definitely have the bread master touch. I shall have to try again. I'm a kaiser roll fan for hamburger buns as well and that's kind of what I was looking for when making hamburger buns.
