



Moe loves Quail. Not something I cook very often. I roasted six of the little guys tonight. They were first marinated with garlic, olive oil, fresh thyme, and oregano, salt, pepper and the juice of a whole lemon and then stuffed with soft goat cheese that I seasoned with fresh garlic, rosemary, salt and pepper. Roasted in a 475°F oven for about 20 minutes, basting every 5 minutes with a little butter and chicken broth.
I've never had quail, but it looks delicious! Stuffed with goat cheese & herbs? That sounds wonderful, Ann -
