Fresh from the Ocean - Dungeness Crab

I had planned on roasting a rack of pork for dinner. I had it all ready to go in the oven before leaving for work and Moe was going to look after getting it in to the oven before I got home. We were having dinner with Clif and Barb our next door neighbours.

BUT plans change. For the better! Clif and Barb went down to the docks to pick us up some spotted prawns off one of the boats. The season is coming to an end and we both wanted to get some prawns into the freezer. He picked up 10 pounds for each of us. He also bought 8 large dungeness crabs. Fresh crab trumps roast pork. They gave me the crab to prepare. There must have been between 14 and 16 pounds of crab. I weighed a couple of them and one was 2 pounds 11 ounces and another was 1 pound 12 ounces. I par boiled them and then cleaned them. And, then they went into a 500°F with a cup of butter, 1/2 cup olive oil, 2 heads of garlic, chopped, lots and lots of fresh ground black pepper and about a 1/2 teaspoon of hot red pepper flakes. Roasted for about 15 minutes , tossing them in the butter garlic mixture every 5 minutes. I carried the roasting pan over to Clif and Barbs. Just before serving sprinkled with fresh chopped parsley and squeezed a lemon over it. OMG it was soooo good. And so messy to eat. We didn't finish it all but we made a big dent in it.

The rack of Pork is on the menu for tomorrow.

I still had 10 pounds of live prawns to behead after I got home. They were still moving and jumping out of the pail. When all was said and done I ended up with 7 containers for the freezer, each with 21 or 22 prawns.

That looks so good...you live in a wonderful place Ann! We are not far from the sea here, but you get all the good stuff from the left coast!

  5. You live in seafood heaven. We have wonderful seafood too here in Oregon but the Dungeness crabbing season this year is off. I've saved your recipe and will use it in December when the season opens again. I can almost taste it now. Thanks for the recipe.
