Making do with what's on hand.......
Too lazy to go out today so I made do with what I had on hand. Pulled Lamb shanks out of the freezer. Browned, seasoned with salt and pepper, sauted onions and garlic, added beef broth and a squirt of tomato paste, covered and cooked in a 350°F oven until almost tender. Added cubed rutabaga and continued to cook until done. Served with a couscous cooked in chicken broth and then seasoned with onions and garlic that were cooked in olive oil, orange zest and black olives.

I have a hard time making good creative use of on-hand ingredients. If I don't have a recipe, I'm pretty sunk. I have much admiration for a cook who can "iron chef" a meal that is tasty, healthful, and has eye appeal. Well done!
