Asparagus, Chive and Tomato Frittata


We ate the cream cheese filled muffins with out morning coffee so I didn't get around to making any real food until after noon.

I made an Asparagus, Tomato and Chive Frittata. Steamed the asparagus first. Mixed up 6 eggs with a little cream, salt, pepper, chopped tomato, chives and a handful of mozzarella cheese. Would have preferred cheddar but didn't have any on hand. Started the frittata on top of the stove and finished it off in a 375°F oven. Served with toasted French bread.

  1. Your frittata looks delicious. I love asparagus. This would be great to make on the weekend for a late breakfast.
