Chicken Parmesan with a Side of Pasta
This is another meal that can be put together in less than an hour after getting home from work.
First thing I did was put the water on to boil for the pasta and the sauce on to simmer. Basically just a marinara sauce; olive oil, garlic, tomatoes, fresh basil, salt and pepper. While the sauce simmered I ground up some fresh bread crumbs, seasoned them with fresh grated Parmesan and a little lemon zest. Pounded the chicken breasts to flatten. Rubbed the chicken with fresh garlic, dipped in flour, egg and the breadcrumbs and fried. When the chicken was almost cooked, the pasta went into the pot. It was vermicelli so it didn't take long to cook. Topped the chicken with mozzarella cheese and a little Parmesan and ran it under the broiler until the cheese melted, added the sauce to the pasta and a little on the chicken and dinner was served.

This is one of my favorite dinners. I never thought to rub the chicken with crushed garlic before breading it. I will try that next time. Great picture!
