Greek - Roast Chicken and Potatoes

Rather than a traditional roast chicken dinner I decided to go Greek.

Lots of garlic, oregano and fresh squeezed lemon juice over the potatoes and the chicken. Roasted at 500°F.

I love how the potatoes absorb all the wonderful flavours, especially the lemon.

  6. I have a question about the potatoes and the chicken...so you marinate the chicken and do you jsut cut up garlic and put it everywhere....and do you cover the chicken and roast potatoes

  7. Everything is sprinkled over the chicken and the potatoes and roasted over high heat. I don't marinade the chicken.

    You could though if you wanted too. Just rub the chicken with fresh minced garlic, lots of oregano and lemon zest and refrigerate.
