Monday Night's Dinner

Braised Short Ribs







I'd been craving Beef Short Ribs for a while Finally got around to making them Monday night.

This is one of those dishes that I just wing. No real recipe needed. This time I just browned the meat well and then removed it from the pot. Next I caramelized onions, one large onion, thinly sliced, added about 8 or 10 peeled and cracked garlic cloves, a splash of red wine, beef broth, a squirt of tomato paste, some fresh orange zest and a sprig of rosemary. Put the meat back in the pot and into a 350°F oven for about 2 hours or until meat is tender.

The Short Ribs were served with a soft polenta cooked in chicken broth and seasoned with garlic, butter and Parmesan cheese. And Brussel Sprouts with Chestnuts.
