Another Roast Chicken Dinner
I know, I know, we just had a roast chicken dinner 10 days ago. But I would be happy to eat roast chicken twice a week. It tastes good and is so easy to put together.
I got in the house after work tonight just before 5:30 and put the chicken in a 500°F oven. Moe had the oven on and preheated for me so I didn't have to wait for that. I started the onions and the celery sauting for the dressing/stuffing and while that was happening I cubed the bread. Added some chicken broth to the vegetables and let them simmer until tender. Seasoned with sage, salt and pepper, and parsley and tossed with the bread. Spooned into a casserole, covered and into the convection oven. Peeled the potatoes and cut up the rutabaga. Just before the chicken came out of the oven the potatoes and the rutabaga both went on to cook. While the chicken rested, I made the gravy. The stuffing/dressing came out of the oven, mashed the potatoes, buttered the rutabaga and seasoned with a cracked garlic clove and salt and pepper. Cooked the peas and carved the chicken. About an hour and 15 minutes, start to finish.

Work all day and then come home and make a Thanksgiving dinner..Moe must always be so anxious for you to come home...!
ReplyDeleteAnn, it's all second nature to you, you breeze right through preparing a delicious meal. That would take me hours and nothing would come off at the right time. You certainly have a talent!

ReplyDeletewhen I first joined GB's in 2005 everyone was talking about some dessert bars that you made. I even emailed you for the recipe but lost it before I ever made them. Do you know what I'm talking about? If so I would love to see that recipe again Thibeault's Table.

Marsha, I'm wondering if it is the Graham Cracker Chewies or the Silly Toffee Squares you are thinking of? I'll post both later today.
This is obviously a meal you could cook in your sleep! And yet it's still so beautiful. I baked my first chicken last spring and have repeated it quite a few times since. I'm getting quicker. I don't know if I could ever get it down to such a science though. I'm like you. I could eat this every day.
