New Years's Eve

New Year's Eve dinner was shared with our of our neighbours.

We started with Green Chili Cheese Squares.

Green Chile Squares

We love simple recipes, and this one certainly qualifies. With only three ingredients it whips up in under five minutes and then bakes unattended, making it perfect for parties. It can also be made up to 24 hours ahead of time and served hot, cold, or at room temperature.

2 cups grated Monterey Jack cheese (or cheddar cheese)
2 cans green Chilies
4 well beaten eggs


Preheat the oven to 350 degrees. Sprinkle the cheese and chilies in the
bottom of a 9X13 baking dish. Pour the eggs over the top. Bake for
30-40 minutes or until golden brown and firm. Cool to room temperature
and then cut into squares.

I baked a large ham, and it was served with a potato gratis, sweet potatoes with caramelized onions and fresh steamed buttered green beans.

Sweet Potatoes with Caramelized Onions

3 or 4 Sweet Potatoes
1 large onion
olive oil
butter
Salt
Pepper


Cook onions in oil and butter until caramelized. Should take about 25 to 30 minutes.

While onions are cooking Boil potatoes until tender. Run under cold water to remove peel.


Mash sweet potatoes, add caramelized onions, a chunk of butter and season with salt and pepper to taste. If you like them even creamier add a couple of tablespoons of heavy cream.



Dessert was this wonderfully decadent White Chocolate Cheesecake.


White Chocolate Cheesecake

Dulce de Leche Cheesecake recipe

Crust

1 1/2 cups Graham Cracker Crumbs
2 tablespoons sugar
6 tablespoons melted butter

Mix together and pat into bottom of a spring form pan lined with Buttered parchment paper. Bake at 350°F for 10 minutes. Set aside to cool

Filling:
3 (8 oz.) packages cream cheese (24 oz. total)
1 cup superfine granulated sugar
2 tbsp. all-purpose flour
2 tsp. vanilla extract
3 eggs
1/3 cup heavy cream
6 ounces melted quality white chocolate

Reset oven temperature to 325°F (160°C).

Melt white chocolate with heavy cream. Stir until smooth. Set aside to cool.

With an electric mixer beat cream cheese, sugar and flour together until well mixed and smooth. Add vanilla and beat until smooth. Add eggs one at a time, beating well after each addition. Beat until smooth.Add the melted chocolate cream mixture. Stir until smooth.

Pour plain batter over crust.

Wrap foil around the bottom and up the sides of the pan.

Place in a shallow pan and pour in hot water. (Bain Marie)

7. Bake in preheated 325°F (160°C) oven for 50 to 60 minutes or until center is almost set.Remove from the oven and let cool. When cool refrigerate overnight or for at least 4 or 5 hours.

Drizzle with white chocolate and or Dulce de Leche.
